A chef with experiences as diverse as they are varied, this towering figure of almost 100 kilograms adores eating. As a young man, he himself says, "I spent hours in the kitchen with my grandmother after school, getting my hands into all those preparations." This hands-on approach has stayed with Jimmy to this day.

A bold and accomplished chef, his culinary skills were forged through experiences acquired alongside Cyril Lignac, Michel Troisgros, as well as Mathieu Viannay, a two-star Michelin chef and Meilleur Ouvrier de France.

The taste for adventure and discovery led him to leave his native Guadeloupe for Paris, and today he settles in Miami much to the delight of discerning gourmets.


Laetitia, his alter ego, whom he met during his time with the American group "Hyatt," cultivates the art of French living wonderfully. Her motto can be summed up in a single sentence: "To give the customer the best possible experience no matter the location." More than just a hostess, Laetitia is the person who will bring all your service experiences to life with a smile and elegance.
